These Samoan Coconut Bread rolls are sweet, soft, and finger-licking delicious! I really can't put into words how good it is, you need to find out yourself.
INGREDIENTS / 13
DOUGH
- 3 cups all-purpose flour plus more for kneading
- 1/4 cup sugar
- 1/4 cup melted butter or oil
- 1 1/2 teaspoons salt
- 1 teaspoon coconut flavour
- 2 1/4 teaspoon yeast
- 1 large egg
- 1/4 cup warm water
- 3/4 cup coconut milk
COCONUT SAUCE
- 1 cup coconut milk
- 1/4 sugar
- 1/4 teaspoon salt
- 1 tablespoon cornflour

Pour the warm water into a small bowl, sprinkle in the yeast and 1 teaspoon of sugar, give it a quick mix and leave until frothy.

10 minutes later.

Add the egg, melted butter or oil, sugar, coconut flavour and coconut milk.

Add the flour and salt

Knead until dough is smooth.

Oil the inside of your bowl and place the dough inside, cover the bowl with plastic wrap and/or kitchen towel, and place in a warm spot until doubled in size.

About 90 minutes later.

Grease a baking pan or baking tray with high sides with butter. Punch dough down and divide it into 10 to 12 parts.

Take each piece and shape it into balls.

Arrange dough balls in a buttered baking pan seam side down.

Cover with plastic wrap or kitchen napkin and allow to double in size. About 1 hour. While the dough is rising, let's make some coconut sauce.

Add the sugar, coconut milk, salt and cornflour into a pot on medium heat.

Stir just until sugar is dissolved and turn off the heat.

1 hour later... 10 minutes before the end of the second rise, preheat your oven to 350 degrees F

Pour the warm coconut sauce over the rolls

Bake in the preheated oven for about 25 to 30 minutes.
