Mashed Yam Balls
These simple, yet tasty yam balls are crispy on the outside, soft and fluffy on the inside. I made this with just onions and pepper in the mixture. You could make them tastier by adding items like shredded chicken, fish, meat, cheese, vegetables, or whatever you like to it.

These simple, yet tasty yam balls are crispy on the outside, soft and fluffy on the inside. I made this with just onions and pepper in the mixture. You could make them tastier by adding items like shredded chicken, fish, meat, cheese, vegetables, or whatever you like to them.
You can freeze them and fry whenever you want to have them. I have a Fried Potato version you can try too.

- A small tuber of yam
- Salt - to taste
- Hot pepper - to taste
- Onion - 1 medium, chopped
- Green pepper - 1, chopped
- Corn flakes - 5 cups
- Eggs - 3
- Oil - for deep frying

Peel and rinse the yam

Transfer into a pot, cover with water and add some salt to taste. Cook until soft.

Remove the cooked yam from the water and transfer into a bowl.

Mash with a fork. It doesn't have to be smooth and allow to cool.

Add the chopped peppers, onion and some salt to taste. Mix until well combined.

Using a tablespoon, scoop about a tablespoon of the mixture until your hands and form into a ball. Repeat the process and set aside.

Crush the corn flakes. You can also use bread crumbs.

Crack the eggs into a bowl, season with salt and whisk to combine.

Working with one ball at a time, roll the yam ball in the whisked egg until well covered then transfer into the crushed corn flakes and press gently until it's well coated. Repeat the process

Fry in hot oil until golden brown

Transfer unto paper towels to drain excess oil

Serve hot.
