INGREDIENTS / 24
- Chicken gizzard - 1 kg
- Salt - to taste
- Thyme - 1 teaspoon
- Curry powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- White pepper - 1 teaspoon
- Onion - 1 medium
- Ginger - thumb size
- Garlic - 3 cloves
- Chilli - pepper - to taste
- Water - for blending
- Bay leaves - 2
BREADING
- Eggs - 2
- All-purpose flour - 1 & 1/2 cups
- Cornflour - 1/3 cup
- Salt - 1 teaspoon
- Onion powder - 1 teaspoon
- Ginger powder - 1 teaspoon
- Garlic powder - 1 teaspoon
- Thyme - 1 teaspoon
- Oregano - 1 teaspoon
- Curry powder - 1 teaspoon
- Pepper - to taste
- Vegetable oil - for frying

Trim the excess fat from the gizzards, wash and transfer into a pressure pot. You can use a regular pot if you don't have one.

Add some salt to taste.

Add the curry powder, thyme, and white pepper.

Blend the onion, garlic cloves, ginger, and pepper with a little bit of water, and transfer to the pot.

Add two bay leaves and mix to combine. Cover the pot and cook until the gizzards are soft and tender.

Remove the cooked gizzards from the broth and set them aside to cool.

Heat up some oil for deep frying.
Measure out the all-purpose flour into a bowl.

Add the cornflour/corn starch.

Add the salt, onion powder, ginger powder, thyme, oregano, curry powder, chilli powder and garlic powder.

Mix to combine and set aside.

Break two eggs into a bowl and mix to combine.

Drop in a few of the cooked gizzards and move them around until it's well coated with egg.

Transfer into the flour mixture .

Cover the gizzards with flour and press it on to evenly coat, then tap out the excess.

Transfer to a plate and repeat the process.

Gently drop gizzards into hot oil and fry just until golden. You do not want to over-fry it.

Remove from oil and drain on paper towels.
