CARAMELIZED ONION
- Vegetable oil - 4 tablespoons
- Big onion - 1, sliced or finely chopped
- Salt - 1/2 teaspoon
DOUGH
- Lukewarm water - 1/4 cup
- Yeast - 1 tablespoon
- Sugar - 1/2 teaspoon
- Egg - 1, optional
- Sugar - 4 tablespoons, optional
- All-purpose or bread flour - 4 cups
- Salt - 2 teaspoon
- Lukewarm water - 3/4 cup + 2 tablespoons

Heat up the oil in a pan over medium heat. When hot, add the onion and fry until it is caramelized.

Season with salt and continue frying for about a minute.

Take off the heat and set aside to cool.

In a medium bowl, pour in the 1/4 cup of lukewarm water, yeast, and 1/2 teaspoon of sugar. Stir and set aside for 10 minutes until it blooms.

After 10 minutes, add the egg.

Add the sugar, flour, salt, caramelized onion, and 3/4 cup plus 2 tablespoons of lukewarm water.

Knead until the dough is smooth. This should take between 8 to 10 minutes.

Transfer the dough into an oiled bowl, cover with a kitchen towel or plastic wrap and place it in a warm spot until it doubles in size. About 1 hour 30 minutes.

Deflate the dough

Divide into two

Shape and place into a buttered pan.

I shaped the other piece of dough into a ball. Cover and place in a warm spot until it doubles in size. About 1 hour.

I sprinkled the top with a bit of flour and slashed it with a sharp blade.
Bake in a preheated 350 degrees F oven for 30 minutes or until done.

Remove from the oven a place on a wire rack to cool.
