A delicious way to use up overripe bananas for the perfect muffins, great for breakfast, snack, or dessert.

- 1 3/4 cups all purpose flour
- 1/2 cup sugar
- 1 cup mashed ripe bananas
- 1 1/2 teaspoon baking powder
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 eggs
- 1/2 cup melted butter
- 1/4 cups raisins, optional

Preheat your oven to 350 degrees F. Grease muffin tin with butter or oil or line with paper liners. Set aside.

Measure out the ingredients.

Whisk together the dry ingredients.

Whisk together the eggs, vanilla, melted butter, and mashed bananas. Pour into the dry ingredients.

Mix to combine. Do not over mix.

Divide batter into muffin tins ( I added raisins to half of the batter and topped with some raisins and banana slices). Bake in the preheated oven for 10 to 14 minutes or until a skewer inserted comes out clean.

Cool on a wire rack for about 3 minutes. Remove from pan and cool further. Enjoy warm or cold.
