This fruit cake is light, tender, has a delicious buttery taste, and's quick and easy to make.
INGREDIENTS / 10
- 2 cups - all-purpose flour
- ½ cup - sugar
- ½ cup - unsalted butter
- 1 to 2 cups - raisins/cherries plus more for the top
- 3 - large eggs
- 1 teaspoon - baking powder
- ½ teaspoon - nutmeg
- ¼ teaspoon - salt
- ½ cup - milk
- 1 teaspoon - vanilla extract

Measure out the flour into a bowl

Add the baking powder and salt.

Mix to combine.

Spoon some tablespoons of flour into the dried fruits and mix it to combine. This is to prevent it from sinking to the bottom of the cake. Set aside.

Add the butter and sugar into another bowl.

Mix until creamy.

Add the eggs one at a time

Mix well after each addition.

Add the vanilla essence and mix to combine.

Add the flour, a little at a time. Mix to combine.

Alternate between the flour and the milk. This is to ensure you don't over mix.

Add the rest of the flour and nutmeg and mix to combine.

Scrape down the sides of the bowl and gently fold in any visible flour.

Add the dried fruits along with the flour.

Gently fold in

Pour batter into a well buttered pan and smoothen the top.
You could line the bottom and sides of the pan with parchment paper.

Decorate the top with raisins, plums, cherries and nuts if you wish.
Bake in the preheated oven until a skewer inserted comes out clean. About 50 to 55 minutes.

Take out the cake from the oven and allow to cool in the pan for 10 minutes. After 10 minutes, remove the pan and place on a rack to cool completely.
