INGREDIENTS / 06
- Garlic - 2 heads
- Chilli pepper - 20 - 25 pieces
- Vegetable oil - 1 & 1/2 cup
- Salt - 1/2 teaspoon
- Soy sauce - 1 tablespoon, optional
- Sugar - 1/2 tablespoon, optional

Soak the chilli peppers in warm water until soften. Soaking is optional, you could pound it dry instead.

Finely chop or coarsely blend the pepper and garlic.

Heat up the vegetable oil on low heat.

Add the pepper and garlic. Fry on low heat stirring from time to time so it doesn't burn.

Add some salt to taste. You can add 1 tablespoon of soy sauce for colour and 1/2 tablespoon of sugar for sweetness.

Continue frying on low heat until it seems dry and not burnt.

Turn off the heat and cool completely.

You can strain and discard the garlic and pepper, leaving just the oil.
Transfer to a clean jar, cover, and store in the fridge.
