A simple baked lemon chicken recipe that's so tender, juicy, packed full of bold flavours, insanely delicious, and falls off the bone.
INGREDIENTS / 11
- Chicken - 1 whole
- Salt - to taste
- Thyme - 1 teaspoon
- Black pepper - to taste
- Oregano - 1 teaspoon
- Parsley - 1 teaspoon
- Unsalted butter - 5 tablespoons, melted
- Lemon - Juice of 1
- Minced garlic - 1 tablespoon
- Onion - 1 large
- Chicken broth - 1/2 cup

Bring the chicken out ahead of time to defrost.

Use a scissors or sharp knife to remove the scissors.

Turn the chicken right side up and flatten, so it cooks evenly. Watch the video to see how I did it.

In a medium bowl, add the thyme, black pepper, oregano, parsley and some salt to taste. Mix to combine.

Add the melted butter, lemon juice, minced garlic and mix to combine.

Slice the onion and arrange on the bottom of your roasting dish.

Put in the chicken, skin side down. Pour in half of the lemon mixture and rub it in, making sure to get under the skin.

Turn the chicken over and pour in the rest and repeat the process. Sprinkle some black pepper on the top of the chicken.

Pour the chicken broth around the chicken.
Bake in a preheated 350 F oven for 50 minutes, then broil for 5 minutes. Spoon the juice in the dish over the chicken twice during baking to keep it moist.

Bring out the chicken from the oven.

Cover it with foil and allow it rest for 10 minutes before serving.
