Agoyin beans is plain cooked mushy beans served with tasty fried pepper seeds and ginger sauce. This version uses only dried peppers and lots of onions and it's equally as delicious! It can be enjoyed as is or paired with fried plantains, boiled yam, or bread.
INGREDIENTS / 09
FOR BEANS
- 2 cups white or brown beans
- Salt to taste
FOR SAUCE
- 6 pieces dried red peppers, tatashe
- 4 - 6 pieces dried chilies, shombo
- 1 big onion, thinly sliced
- 2 cups palm oil
- 1 teaspoon cayenne pepper
- Salt to taste
- Stock cube to taste

Measure out your ingredients.

Pour boiling water over dry peppers, cover and leave for about 30 minutes to plump up.

Pick and rinse beans, transfer to a pot of boiling water, enough to cook the beans. Cover and leave to cook until completely soft.

Add some salt to taste. Add more water if necessary and allow to cook for a further 10 minutes until beans is mushy.

Using a wooden spoon or spatula mash beans or leave as is. Set aside.

Transfer peppers to a blender, add a little bit of water and blend until smooth.

Heat up palm oil in a pot over medium heat.

It should look like this after 2 - 3 minutes.

Add the sliced onions.

Stir and allow to fry while stirring constantly.

Keep stirring until it browns, but not burnt. This could take about 15 to 20 minutes.

Add the blended pepper, stock cubes, and salt to taste.

Stir constantly as it burns quickly and let fry for about 15 to 20 minutes.

This is what you are going for. The sauce darkens but is not burnt.

Fry for a few more minutes then take off the heat. It continues to darken as it cools. You can discard some of the oil or save it for another use.
